Cold-Extracted Olive Oil: Why the Decanter Matters

"Cold extracted" appears on almost every extra virgin olive oil label, to the point where it barely registers with a busy buyer anymore. Yet it is a regulated term, and more importantly the visible tip of an industrial process that shapes the certificate of analysis directly: the type of decanter and the malaxation temperature a mill chooses change polyphenols, oxidative stability and sensory profile long before variety or terroir enter the picture. Understanding what happens between the olive and the oil lets a buyer ask sharper questions than acidity and grade alone.

What actually happens between the olive and the oil

The path is short but decisive. Olives are received, washed and leaf-sorted to remove foreign matter, then crushed into a homogeneous paste. That paste goes into a malaxer, where slow, continuous mixing coalesces the oil droplets scattered through the pulp — this step, together with the centrifugation that follows, shapes final quality more than any other. The malaxed paste is then fed into a centrifugal decanter, which separates the oil from vegetation water and pomace (the crushed pulp and pits). The raw oil is finally filtered or settled before storage. At every stage a technical choice affects the outcome, but two of them account for most of the quality gap between two otherwise compliant extra virgin oils: decanter type and malaxation temperature — variables that rarely show up in a spec sheet, yet drive much of what separates a mediocre extra virgin from an exceptional one at the same acidity.

Cold extraction: a regulated term, not a marketing claim

Commission Implementing Regulation (EU) No 29/2012 defines this term precisely. "Cold extraction" may only be used for extra virgin or virgin olive oil obtained by percolation or centrifugation of the olive paste at a temperature that never exceeds 27°C. The neighboring term "first cold pressing" answers a different definition entirely: it is reserved for oil obtained by traditional mechanical pressing with hydraulic presses, a process now marginal against continuous mills. A buyer who genuinely wants a cold process should check which of the two terms actually applies, rather than settling for the generic "cold" claim, which carries no standalone legal definition. The International Olive Council also publishes the standardized methods that frame the extraction process and the grades that follow from it.

Two-phase or three-phase decanter: the variable most specs never mention

This is where the largest gap opens between two oils that are both technically "cold extracted." The three-phase decanter, the older technology, separates oil, vegetation water (margines) and pomace by adding dilution water during centrifugation — typically 40 to 60 liters per 100 kg of olives. The two-phase decanter, more recent, largely dispenses with that added water: it separates the oil from a wet pomace that concentrates vegetation water and pulp together. A study of the Tunisian sector published in the journal OCL quantifies the gap: one tonne of olives processed on a three-phase line generates on average 870 liters of margines and about 550 kg of pomace at 50-60% moisture, against 650 to 700 kg of pasty pomace at roughly 68% moisture for the same tonne on a two-phase line, with no comparable liquid effluent. In a sector with limited water resources like Tunisia, that gap explains why a growing number of partner mills have invested in two-phase technology — an industrial choice with a direct effect on what ends up in the bottle.

What this changes on the certificate of analysis

Oil from a two-phase decanter generally shows higher polyphenol content and a more favorable peroxide value, since the added water in the three-phase process washes out some water-soluble phenolic compounds during centrifugation. Three-phase lots, conversely, sometimes show a rounder sensory profile, with more pronounced fruitiness. Neither technology produces a defect by default — both can deliver a fully compliant extra virgin oil. The real difference shows up in the lot's shelf-life margin and its potential for a polyphenol health claim.

For a buyer projecting a lot across months of transit and shelf time, that gap is not cosmetic. An oil low in polyphenols and already close to the peroxide ceiling will lose freshness faster than a two-phase lot starting from the same acidity. Decanter type does not replace reading the certificate, but it often explains its trajectory over time — a variable worth cross-checking against the extraction date and the storage conditions the supplier states.

To place these figures within a full certificate of analysis, always read them alongside acidity, peroxide and UV absorbances — decanter type explains a tendency, never a standalone result.

Malaxation temperature: the second lever

Malaxation typically runs twenty to forty-five minutes, and its temperature setting is a trade-off every mill decides differently. Pushing toward the allowed 27°C improves oil yield, while working between 18°C and 22°C — a costlier choice in cycle time — favors the preservation of volatile aromatic compounds and polyphenols. Research published on PubMed Central confirms this yield-versus-quality trade-off across malaxation temperatures, with effects that also vary by olive cultivar. For a buyer, this detail never appears on a label — it is negotiated upstream, in the specification agreed with the mill.

Questions to ask a supplier about its extraction process

A buyer who wants to look past the stated grade can ask five straightforward questions of a supplier or partner mill:

  1. Is the decanter used two-phase or three-phase, and is that choice constant through the season or does it vary by lot?
  2. What is the target malaxation temperature, and how long does that step run for the lot in question?
  3. Is the delay between harvest and milling tracked, and does it respect a contractual maximum — beyond 24 to 48 hours, acidity and sensory defects climb regardless of decanter type?
  4. Does choosing this supplier include a mill visit or audit, or only a commercial statement?
  5. Are polyphenols assayed on the certificate, to make the process effect measurable rather than relying on a generic spec sheet?

A counterpart who answers all five with precision demonstrates real traceability of the process, not just of the finished product. A vague answer on decanter type, or no tracking at all of the harvest-to-mill delay, should raise the same flag as an incomplete certificate of analysis: the process and the analysis tell the same story from two different angles.

None of this replaces the certificate as the contractual reference — a buyer still specifies acidity, peroxide and UV absorbance thresholds, not decanter brands. But knowing which process sits behind a lot turns a static snapshot into a forecast: it tells you not just whether today's numbers are compliant, but how much margin the oil is likely to keep after weeks at sea and months on a shelf.
